Recently I came upon the most marvellous thing. For someone who recently wrote a blog post about preferring cheese over men (read here), the idea of recently launched cheese cookery classes at L’Atelier des Chefs is clearly really very exciting. So when invited down to try them out before their July 1st launch, you can imagine the small squeals of glee that erupted from behind my keyboard. 
The classes are partnered with Castello speciality cheese brand who produce a raft of different cheeses, from Danish blue to ‘Tickler’ cheddar. They aim to take the budding turophile (fancy latin word for ‘lover of cheese’, don’t you know) through the ultimate cheeseboard put together by Stefan Gates, food author and TV presenter, paired with drinks matched by expert tippler, Matt Day), before teaching how to cook up some scrummy cheese recipes.
We tried out a cheddar and smoked paprika soufflé (easier than you might think) and parppardelle pasta made with a creamy blue cheese and walnuts. Both recipes were classic and good, solid cookery skills from which can you go on to repeat with all sorts of other flavours. Rather thrilling, ey. 
I adored the chefs there too. It’s not the first time I’ve visited L’Atelier des Chefs and each time I’ve found them endlessly sweet and authoritative. Probably apt ways of dealing with a post-bubbly blogger that gets weird around cheese, really.
