This recipe is adapted from a cracking Neiman Marcus Dip my mum dug up on the internet somewhere. She cooked it for me last time I was home and it was so good I wanted to share it. After all, bacon, cheddar, mayonnaise….what's not to like?
Recipe (Serves 4-6)
¼ cup toasted almonds (sorry- it uses US cups!)
6 slices of streaky smoked bacon, cooked crisp, left to cool and crumbled
1 cup mature cheddar, grated
4 spring onions, finely chopped
½ cup mayonnaise – use as good quality mayo as you can (see my recipe for making your own here). Swap this for sour cream or creme fraiche if you fancy something less mayo-heavy!
Black pepper
Method
1. Mix everything together and serve!!! Serve with toasts or crisp breads -perfect for parties.
